Carol Ann Knapp Foreman, beloved wife, mother, grandmother, great-grandmother, sister, aunt, and friend, passed away peacefully on May 16, 2026, surrounded by the love of her family. Carol was born on February 28, 1938, in Lovington, New Mexico, to Halbert Manley Knapp and Christina Brockmoller Knapp.
Carol spent her early childhood in Forrest, New Mexico, before her family settled in Clovis in 1942. She loved school and especially enjoyed shorthand and typing classes. She graduated from Clovis High School in 1956 and continued her education at Eastern New Mexico University in Portales, where she earned an Associate of Arts degree in Secretarial Science.
While attending ENMU, Carol met the love of her life, Harold W. “Chub” Foreman, on a blind date. The two were married in Clovis in 1958 and shared 64 wonderful years together. They built a life rooted in faith, hard work, and family. Their journey took them from Utah to Nebraska, South Dakota, and California before they finally returned to Las Cruces in 1968, where they established Valley Transit Mix and later Valley Leasing & Development. She and Chub were faithful supporters of New Mexico State Aggie athletics and attended many Aggie games over the years.
Carol devoted herself wholeheartedly to her family. She was a tireless homemaker who lovingly supported her children in every sport, lesson, and activity. She sewed clothes, led Girl Scouts, helped with Blue Birds. Creative and talented, Carol filled her home with beautiful tole paintings and spent countless hours researching and preserving her family genealogy. She created a warm and welcoming home for all who entered.
She was preceded in death by her beloved husband, Harold W. “Chub” Foreman in 2023; her parents, Halbert and Christina Knapp; her mother- and father-in-law; her beloved granddaughter, Lyndsee Grace Foreman; as well as her brother- and sister-in-law, Ed and Barbara Foreman.
She is survived by her children, Barbara Hunter and husband Carl, Laura Leong and husband David, and Brad Foreman and wife Debbie; her 15 grandchildren and 23 great-grandchildren; her twin sisters, Joan Copeland and husband Charles “Cope” Copeland, and Jean Randall and husband Palmer “Woody” Randall; many beloved nieces and nephews; and many dear friends.
Carol will be remembered for her kindness, generosity, warm spirit, and unwavering love for others. Her smile could light up a room, and she never missed an opportunity to tell those around her that she loved them. Her presence brought comfort, joy, and strength to all who knew her.
A private family service will be held.
